David Tran has had a passion for cooking since childhood, growing up watching Martin Yang's Yan Can Cook on PBS instead of doing his homework. At 18, he secured his first job at a sushi restaurant and fell in love with the discipline and precision being a sushi chef requires. After ten years as a sushi chef, two of those spent at Uchi Dallas, he made the move to Uchibā to expand his horizons as a chef without leaving behind his well-honed sushi skills. He continues to elevate the Uchibā menu with his creativity.
