Biography

Born and raised in Napoli, Italy, Giuliano Matarese belongs to a family of restaurateurs and chefs. Growing up, he was involved in his family business, learning techniques and recipes of the Neapolitan tradition.

His free spirit and love for food always stimulated his creativity and pushed him to explore various regional expressions of Italian cuisine. In fact, he worked in prestigious restaurants in Sardegna, Veneto and Lago di Garda. He went on to follow his dream of moving to New York, where he perfected his skills in some of the city’s most renowned restaurants including Charlie Palmer’s Aureole under mentor and chef, Dante Boccuzzi.

Now with more than 20 years of experience, his career includes esteemed positions in luxury resorts and “Michelin Star” restaurants like Convivio. He has also appeared on top cooking shows including Chopped and Beat Bobby Flay.

Giuliano is now Executive Chef and owner of Mille Lire, an Italian restaurant in Dallas, TX, which he launched with business partner, Brian Ellard. The restaurant is Chef Giuliano’s homage to “la dolce vita” of Italy, a fascinating period before the Euro currency when everything was less frantic and there was time to enjoy life’s simple pleasures. Mille Lire is also a nod to the modern Italian way of approaching food, welcoming new flavors into classics, and reinventing traditional dishes without betraying their most authentic essence.

Chef Giuliano now resides in Dallas with his wife, son, and chihuahua. When not curating menus or memorable experiences for diners, he enjoys art, photography, music and traveling.
